Canelé Flambé by Alan Bray is inspired by the caramelized, flame-finished French canelé dessert. It opens with rum, cinnamon, apple, and praline, followed by a heart of powdery iris, warm sandalwood, and resinous cistus. The drydown blends vanilla, amber, and tonka bean with nuances of wood moss, myrrh, and musk, creating a gourmand-ambery profile with a subtle smoky facet.
